Healthy Artichoke Spinach Pie (Phyllo) — a healthy halal recipe with 320 calories and 14g protein per serving.
Ingredients
- 1 (10 oz) bag spinach, wilted
- 1 (15 oz) can artichoke hearts, chopped
- 8-10 sheets phyllo dough (halal), thawed
- 8 oz ricotta or feta (halal), 2 eggs or flax eggs
- 3 garlic cloves, 1 tsp dill, salt & pepper
- ¼ cup olive oil for brushing
Instructions
- 1Preheat oven 375°F. Mix spinach, artichokes, cheese, eggs, garlic, and herbs.
- 2Layer 4-5 phyllo sheets in oiled baking dish, brushing each with oil.
- 3Spread filling, top with remaining phyllo sheets, brushing oil between layers. Tuck edges.
- 4Score top and bake 30-40 min until golden. Cool slightly before cutting.
