Ingredients
- 14 oz extra-firm tofu, pressed and cubed
- 1 can (13.5 oz) full-fat coconut milk
- 2 cups mixed vegetables (broccoli, carrots, bell peppers, zucchini)
- 1 onion, diced
- 3 garlic cloves + 1 tbsp ginger, minced
- 2-3 tbsp red or green curry paste (check halal)
- 2 tbsp coconut oil or olive oil
- 1 tbsp tamari or coconut aminos
- Fresh cilantro and lime wedges
Instructions
- 1Pan-fry tofu cubes in 1 tbsp oil until crispy; set aside.
- 2In same pan, sauté onion, garlic, and ginger. Add curry paste and cook 1 minute.
- 3Pour in coconut milk and tamari. Add vegetables and simmer 10-12 minutes until tender.
- 4Return tofu and simmer 3-5 minutes. Serve with cilantro and lime.
