Ingredients
  • 14 oz extra-firm tofu, pressed and cubed
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups mixed vegetables (broccoli, carrots, bell peppers, zucchini)
  • 1 onion, diced
  • 3 garlic cloves + 1 tbsp ginger, minced
  • 2-3 tbsp red or green curry paste (check halal)
  • 2 tbsp coconut oil or olive oil
  • 1 tbsp tamari or coconut aminos
  • Fresh cilantro and lime wedges
Instructions
  1. 1Pan-fry tofu cubes in 1 tbsp oil until crispy; set aside.
  2. 2In same pan, sauté onion, garlic, and ginger. Add curry paste and cook 1 minute.
  3. 3Pour in coconut milk and tamari. Add vegetables and simmer 10-12 minutes until tender.
  4. 4Return tofu and simmer 3-5 minutes. Serve with cilantro and lime.
