Ingredients
- 1.5 lbs halal large shrimp, peeled and deveined
- 4 cups cauliflower rice
- 2 eggs, beaten (optional)
- 3 tbsp coconut aminos
- 2 tbsp avocado oil
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 cup diced carrots and peas (minimal)

Instructions
- 1Heat 1 tbsp oil in a large skillet. Cook shrimp 2-3 minutes per side until pink. Remove and set aside.
- 2Add remaining oil, garlic, and ginger. Sauté 1 minute. Push to side and scramble eggs if using.
