Ingredients
- 10-12 oz paneer (halal), cubed
- 1 lb fresh spinach (or 16 oz frozen)
- 1 large onion, chopped
- 3 garlic cloves + 1 inch ginger
- 1 tomato, chopped
- 1 tsp each: cumin, garam masala, turmeric
- ½ tsp chili powder
- 3 tbsp ghee or olive oil
- ½ cup Greek yogurt or coconut cream
- Salt to taste
Instructions
- 1Blanch spinach in boiling water 1-2 minutes, then blend into smooth puree.
- 2Fry paneer cubes until golden; set aside.
- 3Sauté onion until golden. Add ginger-garlic, tomato, and spices. Cook 5 minutes.
- 4Stir in spinach puree and yogurt/cream. Simmer 5 minutes. Add paneer and cook 3-4 minutes.
