Ingredients
- 1 cup brown rice or quinoa
- 1 cup green lentils, cooked
- 8 oz mushrooms, sliced
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp cumin and thyme
- 2½ cups vegetable broth
- Fresh parsley
- Salt and pepper
Instructions
- 1Sauté onion and mushrooms in oil until golden. Add garlic and spices.
- 2Add rice and stir 1-2 minutes. Pour in broth and bring to boil.
- 3Simmer covered 25-30 minutes. Stir in cooked lentils in last 10 minutes.
- 4Fluff with fork and garnish with parsley.
