Ingredients
- 1 cup red lentils, rinsed
- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 1 (14.5 oz) can diced tomatoes
- 6 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp each: cumin, paprika, dried mint
- ½ tsp chili flakes (optional)
- Fresh parsley and lemon wedges
- Salt and black pepper
Instructions
- 1Heat olive oil in a pot. Sauté onion, carrots, and celery for 5-6 minutes. Add garlic and spices; cook 1 minute.
- 2Add lentils, tomatoes, and broth. Bring to a boil, then simmer 25-30 minutes until lentils are very soft.
- 3Blend partially with immersion blender for creaminess or leave chunky.
- 4Season and serve with fresh parsley, lemon juice, and a drizzle of olive oil.
