Eggplant and Lentil Moussaka (Baked Healthy) — a healthy vegetarian halal recipe with 280 calories and 16g protein per serving.
Ingredients
- 2 large eggplants, sliced
- 1 cup green or brown lentils, cooked
- 1 onion, 4 garlic cloves, 1 carrot
- 1 (28 oz) can crushed tomatoes
- 2 tbsp olive oil, cinnamon pinch, oregano, cumin
- Topping: 2 cups Greek yogurt mixed with 2 eggs (or plant-based), ¼ cup grated cheese, nutmeg
Instructions
- 1Roast or grill eggplant slices until tender. Sauté onion, garlic, carrot; add lentils, tomatoes, and spices. Simmer 15 minutes.
- 2Layer in baking dish: eggplant, lentil sauce, repeat. Top with yogurt-egg mixture and cheese.
- 3Bake at 375°F for 35-40 minutes until golden and set. Let rest 10 minutes before slicing.
