Ingredients
- 1.5 lbs carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 2-3 tsp zaatar spice
- Salt
- 4 cups arugula or spinach
- ¼ cup fresh parsley
- ⅓ cup toasted pine nuts or almonds
- Dressing: 3 tbsp olive oil, juice of 1 lemon, 1 tsp honey, salt & pepper.
Instructions
- 1Preheat oven 425°F. Toss carrots with oil, zaatar, and salt. Roast 25-30 min.
- 2Whisk dressing. Place greens on platter, top with warm carrots, herbs, and nuts. Drizzle dressing.
