Easy White Bean Salad Recipe (Tuscan Style) — a healthy halal recipe with 250 calories and 12g protein per serving.
Ingredients
- 2 (15-oz) cans cannellini or white beans, drained & rinsed
- 1 cup cherry tomatoes, halved
- ½ red onion, finely diced
- 2 celery stalks, diced
- ¼ cup fresh parsley and basil, chopped
- Dressing: ¼ cup olive oil, juice of 1 lemon, 1-2 garlic cloves minced, 1 tsp dried oregano or Italian herbs, salt & black pepper.
Instructions
- 1Whisk dressing.
- 2Combine beans with vegetables and herbs in a bowl.
