Ingredients
- 1 large onion, 1 red bell pepper, 4 garlic cloves
- 1 (28 oz) can crushed tomatoes
- 2 tsp cumin, 1 tsp paprika, ½ tsp chili flakes

- 4-6 oz feta (halal), crumbled
- Fresh cilantro or parsley, olive oil
Instructions
- 1Sauté onion and pepper in oil 6-7 min. Add garlic and spices 1 min.
- 2Pour in tomatoes, simmer 10 min until thickened.
- 3Make wells and crack eggs (if using). Cover and cook 5-8 min until whites set. Top with feta and herbs. Serve with pita.
