Ingredients
- 1 cup fine bulgur, soaked 15 min and drained well
- 2 cups cooked lentils or 1 (15 oz) can chickpeas, pulsed
- 1 small onion, ½ cup fresh parsley & mint
- 2 tsp allspice, 1 tsp cumin, ½ tsp cinnamon, salt & pepper
- 3 tbsp olive oil, pine nuts, pomegranate seeds
- Fresh veggies (cucumber, tomatoes, mint leaves) for serving
Instructions
- 1Process lentils/chickpeas with onion, herbs, and spices into a coarse paste. Mix thoroughly with drained bulgur and 2 tbsp oil.
- 2Spread on a plate or form into small portions. Drizzle with remaining olive oil.
- 3Top with toasted pine nuts and pomegranate. Serve with fresh vegetables, olives, and yogurt.
