Ingredients
- 2 tbsp olive oil
- 1 large fennel bulb, thinly sliced (reserve fronds)
- 1 onion, diced
- 3 garlic cloves, minced
- 2 (28 oz) cans crushed tomatoes
- 4 cups vegetable broth
- 1 tsp dried basil, salt & pepper
- Fresh fennel fronds and lemon zest
Instructions
- 1Heat oil; sauté fennel and onion 8-10 min until softened. Add garlic 1 min.
- 2Add tomatoes and broth. Simmer 25-30 min.
- 3Blend until smooth. Finish with lemon zest and garnish with fennel fronds.
