Easy Tomato Basil Soup (Healthy) — a healthy halal recipe with 180 calories and 6g protein per serving.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 1 carrot, diced
- 3-4 garlic cloves, minced
- 2 (28 oz) cans crushed or whole tomatoes (fire-roasted preferred)
- 3 cups vegetable or halal chicken broth
- 1 cup fresh basil leaves (packed)
- Salt, pepper, pinch red pepper flakes
- Optional: 1 tbsp tomato paste for depth
Instructions
- 1Sauté onion and carrot 5-7 min. Add garlic.
- 2Add tomatoes, broth, and seasonings. Simmer 20-30 min.
- 3Blend smooth. Stir in most basil (reserve some for garnish). Serve with extra basil.
