Easy Three Bean Salad (Mediterranean Vegetarian) — a healthy halal recipe with 280 calories and 14g protein per serving.
Ingredients
- 1 (15 oz) can chickpeas, 1 (15 oz) can kidney beans, 1 (15 oz) can cannellini beans (all drained & rinsed)
- 1 red onion, finely diced
- 1 bell pepper, 2 celery stalks, chopped
- ¼ cup fresh parsley, 2 tbsp fresh dill
- ¼ cup olive oil, juice of 2 lemons, 1 tsp Dijon mustard, 1 tsp oregano, salt & pepper
Instructions
- 1Combine all beans in a large bowl. Add chopped vegetables and herbs.
- 2Whisk oil, lemon juice, mustard, oregano, salt, and pepper. Pour over beans and toss gently.
- 3Refrigerate 30+ min for flavors to develop. Serve chilled as a side or light main.
