Ingredients
- 1 cup quinoa, cooked and cooled
- 2 large bunches parsley, finely chopped (about 3-4 cups)
- ½ cup fresh mint, chopped
- 4-5 green onions, sliced
- 3-4 tomatoes, finely diced
- 1 cucumber, finely diced
- Dressing: ⅓ cup olive oil, juice of 2-3 lemons, salt & pepper.
Instructions
- 1Cook and cool quinoa.
