Ingredients
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 cup red or brown lentils, rinsed
- 6 cups vegetable broth
- 1 tsp cumin, ½ tsp coriander
- 4-6 cups fresh spinach, chopped
- Juice of 1-2 lemons

Instructions
