Ingredients
- 2 large eggplants
- 2 tbsp tahini
- 2 garlic cloves, minced
- Juice of 1-2 lemons
- ¼ cup fresh parsley, chopped
- 1 cup cherry tomatoes, halved
- Olive oil for drizzling
- Salt & pepper
Instructions
- 1Preheat oven 425°F. Pierce eggplants and roast 35-40 min until collapsed. Cool, scoop flesh.
- 2Mash eggplant with tahini, garlic, lemon juice, salt & pepper.
- 3Fold in tomatoes and parsley. Drizzle with olive oil. Serve as dip or salad with pita.
