Ingredients
- 1.5 lbs carrots, cut into sticks
- 2 tbsp olive oil
- 2 tsp ground cumin
- Salt & pepper
- ¼ cup fresh cilantro and parsley
- ⅓ cup toasted almonds
- Dressing: 3 tbsp olive oil, juice of 1 lemon, 1 tsp honey, salt & pepper.
Instructions
- 1Preheat oven 425°F. Toss carrots with oil, cumin, salt & pepper. Roast 25-30 min.
- 2Whisk dressing. Toss warm carrots with herbs and almonds.
- 3Drizzle dressing. Serve warm or at room temperature.
