Ingredients
- 4-5 medium beets, trimmed & scrubbed
- 4 cups arugula or mixed greens
- 4 oz goat cheese (halal), crumbled
- ⅓ cup walnuts, toasted & chopped
- 1 shallot, thinly sliced
- Optional: 1 green apple, thinly sliced
- Dressing: ¼ cup olive oil, 2 tbsp balsamic vinegar, 1 tsp honey or maple, 1 tsp Dijon mustard, salt & pepper.
Instructions
