Ingredients
- 4 medium beets, cubed
- 1 cup quinoa
- 2 cups vegetable broth
- 4 cups arugula or mixed greens
- ⅓ cup goat cheese or halal feta, crumbled
- ¼ cup walnuts, toasted

Instructions
