Easy Red Lentil Kofta Curry — a healthy halal recipe with 340 calories and 16g protein per serving.
Ingredients
- Kofta: 1 cup red lentils (cooked until soft), 1 onion, 3 garlic, ½ cup cilantro, 2 tsp garam masala, 4 tbsp chickpea flour, salt.
- Curry: 1 onion, 2 garlic, 1 tbsp ginger, 1 (15 oz) can tomato sauce, 1 cup coconut milk or yogurt, 1 tsp cumin, 1 tsp turmeric, 1 tsp coriander, chili to taste.
Instructions
- 1Mix cooked lentils with finely chopped onion, garlic, herbs, spices, and flour. Form into balls. Bake at 400°F for 15-20 min.
- 2For curry: sauté onion, garlic, ginger, and spices. Add tomato sauce and simmer 10 min. Stir in coconut milk.
- 3Gently add baked koftas and simmer 5-8 min. Garnish with cilantro. Serve with rice.
