Ingredients
- 2 tbsp olive oil or coconut oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 (29 oz) can pumpkin puree (or 4 cups fresh roasted)
- 4 cups vegetable broth
- 1 (13.5 oz) can coconut milk
- ½ tsp cinnamon, ¼ tsp nutmeg, salt & pepper
Instructions
- 1Sauté onion 5 min. Add garlic and ginger 2 min.
- 2Stir in pumpkin, broth, and spices. Simmer 20 min.
- 3Blend smooth, stir in coconut milk, and heat through. Adjust seasoning.
