Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 8-12 oz mushrooms (cremini or button), sliced
- 2 garlic cloves, minced
- ¾ cup pearl barley, rinsed
- 6 cups vegetable broth
- 1 tsp thyme, salt & pepper
- Fresh parsley
Instructions
- 1Sauté onion, carrots, mushrooms until golden. Add garlic.
- 2Add barley and broth; simmer 40-45 min until barley is tender.
- 3Season and garnish. (Barley thickens it naturally.)
