Ingredients
- 2 tbsp olive oil
- 1 large onion, diced
- 1.5 lbs carrots, chopped
- 3 garlic cloves, minced
- 2 tbsp fresh ginger, grated
- 1 tsp cumin, 1 tsp turmeric, ½ tsp cinnamon
- 4 cups vegetable broth
- Juice of 1 orange (optional) or lemon
- Salt & pepper
- Fresh cilantro for garnish
Instructions
- 1Sauté onion in oil 5 min. Add garlic, ginger, and spices; cook 2 min.
- 2Add carrots and broth. Simmer 25 min until carrots soften.
- 3Blend smooth. Stir in citrus juice, season, and garnish with cilantro.
