Ingredients
- 2 cups cooked green lentils
- 1 small onion, 3 garlic cloves
- ½ cup rolled oats
- 2 tbsp tomato paste, 1 tsp Italian herbs, salt & pepper
- 2 tbsp flax meal + 5 tbsp water
- 2-3 cups marinara sauce, olive oil spray
Instructions
- 1Preheat oven 400°F. Pulse lentils, onion, garlic, oats, tomato paste, herbs, and flax mixture.
- 2Form into meatballs. Place on lined sheet and spray with oil. Bake 20-25 min.
- 3Warm marinara sauce. Add baked meatballs and simmer 5-8 min.
- 4Serve over pasta or zucchini noodles.
