Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 2 carrots, diced; 2 celery, diced
- 3 garlic cloves, minced
- ¾ cup green lentils, rinsed
- ½ cup pearl barley, rinsed
- 1 (15 oz) can diced tomatoes
- 7 cups vegetable broth
- 1 tsp cumin, 1 tsp Italian seasoning, bay leaf
- Fresh parsley
Instructions
- 1Sauté onion, carrots, celery 7 min. Add garlic 1 min.
- 2Add lentils, barley, tomatoes, broth, and seasonings.
- 3Simmer 45-50 min until grains are tender. Remove bay leaf and garnish.
