  • 2 cups boiling water
  • 2 large bunches parsley, finely chopped
  • ½ cup fresh mint, chopped
  • 4 tomatoes, finely diced
  • 4 green onions, sliced
  • Dressing: ⅓ cup olive oil, juice of 3 lemons, salt & pepper.
Instructions
