Ingredients
- 1 cup fine bulgur
- 2 cups boiling water
- 2 large bunches parsley, finely chopped
- ½ cup fresh mint, chopped
- 4 tomatoes, finely diced
- 4 green onions, sliced
- Dressing: ⅓ cup olive oil, juice of 3 lemons, salt & pepper.
Instructions
- 1Soak bulgur in boiling water 10-15 min. Drain excess and cool.
- 2Mix bulgur with finely chopped herbs and vegetables.
- 3Add olive oil, lemon juice, salt & pepper. Toss well.
