Ingredients
- 2 lbs Yukon Gold potatoes, cubed
- ½ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- 4 green onions, sliced
- 1-2 garlic cloves, minced
- Dressing: ¼ cup olive oil, juice of 2 lemons, salt & pepper (optional pinch sumac).
Instructions
