Ingredients
- 2 lbs halal bone-in, skin-on chicken thighs (about 6-8 pieces)
- 2 tbsp olive oil
- 4 garlic cloves, minced
- Zest and juice of 2 large lemons
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- ½ tsp black pepper
- Fresh parsley for garnish
Instructions
- 1Preheat oven to 425°F (220°C).
- 2Pat chicken dry. Mix olive oil, garlic, lemon zest/juice, and herbs in a bowl. Rub generously over chicken, including under the skin.
- 3Place skin-side up on a baking sheet. Bake 35-45 minutes until skin is crispy and internal temp reaches 165°F (74°C).
- 4Rest 5 minutes, garnish with parsley. Serve with cauliflower rice or salad.
