Ingredients
- 1 lb halal ground chicken or turkey
- 1 egg, ¼ cup breadcrumbs, 2 tbsp grated halal Parmesan (optional), parsley
- 1 tbsp olive oil
- 1 onion, diced; 2 carrots, sliced; 2 celery, sliced
- 6 cups halal chicken broth
- 2 cups spinach or escarole
- ½ cup small pasta (acini di pepe)
- Salt & pepper
Instructions
- 1Mix ground meat with egg, breadcrumbs, Parmesan, and parsley. Form small meatballs.
- 2Brown meatballs in oil; remove. Sauté onion, carrots, celery 6 min.
- 3Add broth and pasta; simmer 10 min. Return meatballs and cook 8 min. Add greens last 3 min.
