Ingredients
- 1 zucchini, cubed
- 1 eggplant, cubed
- 1 red bell pepper, cubed
- 1 red onion, wedged
- 2 tbsp olive oil
- 1 tsp dried thyme and oregano
- ¼ cup fresh basil and parsley
- Dressing: 3 tbsp olive oil, juice of 1 lemon, 1 garlic clove, salt & pepper.
Instructions
- 1Preheat oven 425°F. Toss vegetables with oil and dried herbs. Roast 25-30 min.
- 2Whisk dressing. Mix roasted vegetables with fresh herbs.
- 3Drizzle dressing and toss gently. Serve warm or cooled.
