Ingredients
  • 1 cup orzo pasta (whole wheat optional)
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • ½ red onion, diced
  • ½ cup Kalamata olives, halved
  • 1 red bell pepper, diced
  • ¼ cup fresh parsley & oregano, chopped
  • Optional: ½ cup halal feta
  • Dressing: ¼ cup olive oil, juice of 1 lemon, 2 tbsp apple vinegar, 1 garlic clove, 1 tsp oregano, salt & pepper.
Instructions
