Easy Greek Orzo Salad Recipe (No Feta Optional) — a healthy halal recipe with 280 calories and 7g protein per serving.
Ingredients
- 1 cup orzo pasta (whole wheat optional)
- 1 cucumber, diced
- 2 cups cherry tomatoes, halved
- ½ red onion, diced
- ½ cup Kalamata olives, halved
- 1 red bell pepper, diced
- ¼ cup fresh parsley & oregano, chopped
- Optional: ½ cup halal feta
- Dressing: ¼ cup olive oil, juice of 1 lemon, 2 tbsp apple vinegar, 1 garlic clove, 1 tsp oregano, salt & pepper.
Instructions
- 1Cook orzo al dente, drain, rinse under cold water.
- 2Whisk dressing. Combine orzo with veggies/herbs. Toss with dressing. Add feta last if using.
