Easy Fattoush Inspired Pita Chip Salad — a healthy halal recipe with 240 calories and 6g protein per serving.
Ingredients
- 2 large pita breads, cut into bite-size pieces
- 2 English cucumbers, chopped
- 4 tomatoes, chopped
- 1 red bell pepper, diced
- ½ red onion, thinly sliced
- 1 romaine lettuce heart, chopped
- ½ cup fresh parsley and mint, chopped
- 2-3 radishes, thinly sliced (optional)
- Dressing: ⅓ cup olive oil, juice of 2 lemons, 1-2 garlic cloves minced, 1 tsp sumac, 1 tsp dried mint, salt & pepper.
Instructions
- 1Preheat oven to 400°F. Toss pita pieces with 1 tbsp olive oil and bake 8-10 min until golden and crisp.
- 2Whisk dressing. In a large bowl combine vegetables and herbs.
- 3Add crispy pita chips just before serving and toss with dressing. Serve immediately.
