Ingredients
- 1 tbsp olive oil
- 1 lb halal chicken breast, shredded or diced
- 1 onion, diced; 1 red bell pepper, diced
- 3 garlic cloves, minced
- 1 (15 oz) can diced tomatoes with green chiles
- 6 cups halal chicken broth
- 1 tsp cumin, 1 tsp chili powder, ½ tsp oregano
- 1 cup corn kernels

Instructions
- 1Brown chicken; remove. Sauté onion and pepper 5 min. Add garlic and spices.
- 2Return chicken, add tomatoes, broth, and corn. Simmer 25 min.
- 3Shred chicken if needed. Serve with cilantro, lime, and tortilla strips.
