Ingredients
- 1 tbsp olive oil
- 1 lb halal chicken breast, diced or shredded
- 1 onion, diced; 2 carrots, sliced
- 6 cups halal chicken broth
- ½ cup orzo or rice
- 3 eggs
- Zest and juice of 2-3 lemons
- Fresh dill, salt & pepper
Instructions
- 1Sauté onion and carrots 5 min. Add chicken and broth; simmer 15 min.
- 2Add orzo/rice; cook until tender. Remove from heat.
- 3Whisk eggs with lemon juice. Temper with hot broth, then stir into soup. Heat gently (do not boil). Garnish with dill.
