Ingredients
  • 8 medium-large tomatoes
  • 1 cup bulgur, cooked
  • 1 onion, 2 garlic cloves, ½ cup parsley and mint
  • 1 (15 oz) can chickpeas or lentils
  • 3 tbsp olive oil, 1 tsp cumin, salt & pepper, lemon zest
Instructions
  1. 1Preheat oven 375°F. Cut tops off tomatoes and scoop out pulp.
  2. 2Mix cooked bulgur with chopped onion, garlic, herbs, chickpeas, oil, and spices.
