Easy Bulgur Stuffed Tomatoes — a healthy halal recipe with 280 calories and 10g protein per serving.
Ingredients
- 8 medium-large tomatoes
- 1 cup bulgur, cooked
- 1 onion, 2 garlic cloves, ½ cup parsley and mint
- 1 (15 oz) can chickpeas or lentils
- 3 tbsp olive oil, 1 tsp cumin, salt & pepper, lemon zest
Instructions
- 1Preheat oven 375°F. Cut tops off tomatoes and scoop out pulp.
- 2Mix cooked bulgur with chopped onion, garlic, herbs, chickpeas, oil, and spices.
- 3Stuff tomatoes and place in baking dish. Drizzle with oil. Bake 30-35 min.
