Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 2 carrots, diced; 2 celery, diced
- 3 garlic cloves, minced
- 2 (15 oz) cans black eyed peas, drained
- 1 (15 oz) can diced tomatoes
- 5 cups vegetable broth
- 1 tsp thyme, 1 tsp smoked paprika, bay leaf
- Fresh parsley and lemon
Instructions
- 1Sauté onion, carrots, celery 7 min. Add garlic 1 min.
- 2Add black eyed peas, tomatoes, broth, thyme, paprika, and bay leaf.
- 3Simmer 30-35 min. Remove bay leaf, mash slightly, and finish with parsley and lemon.
