Ingredients
- 2 tbsp olive oil
- 1 large onion, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 2 (15 oz) cans black beans, drained (or 3 cups cooked)
- 1 (15 oz) can diced tomatoes with green chiles
- 4 cups vegetable broth
- 1 tsp cumin, 1 tsp smoked paprika, ½ tsp oregano
- Lime juice and fresh cilantro
Instructions
- 1Sauté onion and pepper 6 min. Add garlic and spices 2 min.
- 2Add beans, tomatoes, and broth. Simmer 25 min.
- 3Blend partially for thickness. Finish with lime and cilantro.
