Crispy Tofu and Vegetable Sheet Pan — a healthy vegetarian halal recipe with 240 calories and 12g protein per serving.

Ingredients
  • 1 (14 oz) block extra-firm tofu, pressed and cubed
  • 4 cups mixed vegetables (broccoli, cauliflower, carrots, bell peppers)
  • 3 tbsp olive oil
  • 2 tbsp soy sauce or tamari
  • 1 tbsp maple syrup or honey (optional)
  • 1 tsp garlic powder, paprika, salt & pepper
Instructions
  1. 1Preheat oven to 425°F. Toss tofu and veggies with oil and seasonings.

  3. 3Bake 25–30 min, flipping halfway, until tofu is crispy and veggies charred.
