Crispy Tofu and Vegetable Sheet Pan — a healthy vegetarian halal recipe with 240 calories and 12g protein per serving.
Ingredients
- 1 (14 oz) block extra-firm tofu, pressed and cubed
- 4 cups mixed vegetables (broccoli, cauliflower, carrots, bell peppers)
- 3 tbsp olive oil
- 2 tbsp soy sauce or tamari
- 1 tbsp maple syrup or honey (optional)
- 1 tsp garlic powder, paprika, salt & pepper
Instructions
- 1Preheat oven to 425°F. Toss tofu and veggies with oil and seasonings.
- 2Spread on large sheet pan in single layer.
- 3Bake 25–30 min, flipping halfway, until tofu is crispy and veggies charred.
- 4Serve as is or over grains.
