Ingredients
- 2 whole garlic bulbs
- 2 (15 oz) cans white beans, drained
- 1 large onion, diced
- 4 cups vegetable broth
- ½ cup coconut cream or heavy cream
- 3 tbsp olive oil
- 1 tsp dried thyme, salt & black pepper
- Fresh parsley
Instructions
- 1Roast garlic at 400°F for 30–35 min until soft. Squeeze out cloves.
- 2Sauté onion in olive oil. Add roasted garlic, beans, thyme, broth. Simmer 15 min.
- 3Blend until creamy. Stir in cream and heat gently.
- 4Season and garnish with parsley.
