Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 2 carrots, diced
- 1.5 lbs mushrooms, sliced
- 4 garlic cloves, minced
- ¾ cup pearl barley, rinsed
- 6 cups vegetable broth
- 1 tsp thyme, salt & pepper
- ½ cup coconut milk (optional)
- Fresh parsley
Instructions
- 1Sauté onion and carrots 5 min. Add mushrooms; cook until golden (10 min). Add garlic.

- 3Stir in coconut milk if using. Garnish with parsley.
