Creamy Cauliflower Soup (Dairy-Free) — a healthy halal recipe with 160 calories and 5g protein per serving.
Ingredients
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 large head cauliflower (~2 lbs), cut into florets
- 1 medium potato, peeled and diced (for creaminess)
- 4 cups vegetable broth
- 1 cup coconut milk or unsweetened almond milk
- ½ tsp nutmeg, salt & black pepper to taste

Instructions
- 1Heat oil in a large pot. Sauté onion 5 min, add garlic 1 min.
