Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 lbs asparagus, trimmed and chopped (reserve tips)
- 1 medium potato, diced
- 4 cups vegetable broth
- ½ cup coconut milk
- Salt, pepper, lemon zest
Instructions
- 1Sauté onion 5 min. Add garlic and asparagus (save tips). Cook 3 min.
- 2Add potato and broth. Simmer 20 min. Blanch tips separately.
