Chickpea and Kale Warm Salad (Mediterranean) — a healthy vegetarian halal recipe with 380 calories and 15g protein per serving.
Ingredients
- 2 (15 oz) cans chickpeas, roasted (see 301 method) or sautéed
- 1 large bunch kale, chopped and massaged
- 1 red onion, sliced
- Cherry tomatoes, cucumber, olives, feta (optional)
- Lemon vinaigrette: ¼ cup olive oil, juice of 2 lemons, garlic, oregano, salt, pepper
Instructions
- 1Roast or sauté chickpeas with Mediterranean spices.
- 2Sauté or wilt kale lightly in a pan with garlic and oil (keep warm).
- 3Toss warm kale with chickpeas, veggies, and dressing. Serve immediately while warm.
