Ingredients
- 2 medium russet potatoes, baked or microwaved until tender
- 2 large eggs
- ½ cup chopped spinach or broccoli
- ¼ cup shredded cheese
- 2 slices halal turkey bacon, cooked and crumbled (optional)

- Salsa or Greek yogurt for serving
Instructions
- 1Preheat air fryer to 400°F. Halve potatoes and scoop out most of the flesh (save for another use).
