Easy Bell Pepper Egg Nests — a healthy halal recipe with 220 kcal and 15g protein per serving.
Ingredients
- 2 large bell peppers (any color), sliced into ½-inch rings (2-3 rings each)
- 4 large eggs
- ½ cup chopped spinach or baby kale
- ¼ cup diced tomatoes
- 2 tbsp crumbled feta cheese
- Salt, pepper, and dried oregano
- 1 tsp olive oil
Instructions
- 1Heat oil in a skillet over medium heat. Place pepper rings flat.
