Baked Vegetarian Kibbeh (Bulgur Healthy) — a healthy halal recipe with 320 calories and 12g protein per serving.
Ingredients
- 1 cup fine bulgur, rinsed
- 1 large onion, finely chopped
- 2 (15 oz) cans chickpeas or 2 cups cooked lentils, drained
- ½ cup walnuts or pine nuts, chopped
- ¼ cup olive oil
- 2 tsp cumin, 1 tsp allspice, ½ tsp cinnamon, salt & pepper
- Fresh parsley and mint, 2 tbsp pomegranate molasses (optional)
Instructions
- 1Soak bulgur in hot water for 10-15 min, then drain well. Preheat oven to 400°F.
- 2Pulse chickpeas/lentils with half the onion and spices in food processor. Mix with bulgur, remaining onion, herbs, nuts, and 2 tbsp oil.
- 3Press mixture into an oiled 9x13 baking dish or form into patties. Drizzle with remaining oil and score diamond pattern. Bake 30-40 min until golden and firm. Serve with yogurt or salad.
