Baked Vegetarian Falafel Bowl (High Protein) — a healthy halal recipe with 500 calories and 20g protein per serving.
Ingredients
- 2 (15 oz) cans chickpeas, drained (or 1.5 cups dried, soaked)
- 1 small onion, 3 garlic cloves
- 1 cup fresh parsley & cilantro
- 2 tsp cumin, 1 tsp coriander, ½ tsp baking powder
- 3-4 tbsp chickpea flour or oats, salt & pepper
- Olive oil spray
- Bowl: Cooked quinoa (1 cup dry), chopped veggies (cucumber, tomato, lettuce), tahini dressing (tahini + lemon + water + garlic), pickled onions, feta (optional, halal-certified).
Instructions
- 1Preheat oven to 400°F (200°C). Blend falafel ingredients (except flour) in food processor until coarse. Mix in flour. Form into balls/patties.
- 2Place on lined baking sheet, spray with oil, bake 25-30 min, flipping halfway until golden.
- 3Assemble bowls with quinoa, veggies, falafel, and drizzle tahini.
