Ingredients
  • 2 (15 oz) cans chickpeas, drained (or 1.5 cups dried, soaked)
  • 1 small onion, 3 garlic cloves
  • 1 cup fresh parsley & cilantro
  • 2 tsp cumin, 1 tsp coriander, ½ tsp baking powder
  • 3-4 tbsp chickpea flour or oats, salt & pepper
  • Olive oil spray
  • Bowl: Cooked quinoa (1 cup dry), chopped veggies (cucumber, tomato, lettuce), tahini dressing (tahini + lemon + water + garlic), pickled onions, feta (optional, halal-certified).
Instructions
  1. 1Preheat oven to 400°F (200°C). Blend falafel ingredients (except flour) in food processor until coarse. Mix in flour. Form into balls/patties.
  2. 2Place on lined baking sheet, spray with oil, bake 25-30 min, flipping halfway until golden.
