Ingredients
- 14-16 oz extra-firm tofu, pressed and cubed
- 1/3 cup low-sodium soy sauce or tamari
- 3 tbsp maple syrup or honey
- 2 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 3 garlic cloves, minced
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 4 cups cooked brown rice
- 2 cups steamed broccoli
- 1 cup shredded carrots
- Sesame seeds and green onions for garnish
Instructions
- 1Preheat oven to 400°F (205°C). Whisk teriyaki sauce ingredients (soy sauce, maple syrup, vinegar, ginger, garlic, sesame oil, cornstarch).
- 2Toss tofu cubes in half the sauce. Place on lined baking sheet and bake 25-30 minutes, flipping halfway, until crispy.
- 3Warm remaining sauce. Divide rice into bowls, top with baked tofu, broccoli, carrots, drizzle with sauce, and garnish.
