Ingredients
  • 14-16 oz extra-firm tofu, pressed and cubed
  • 1/3 cup low-sodium soy sauce or tamari
  • 3 tbsp maple syrup or honey
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 3 garlic cloves, minced
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 4 cups cooked brown rice
  • 2 cups steamed broccoli
  • 1 cup shredded carrots
  • Sesame seeds and green onions for garnish
Instructions
  1. 1Preheat oven to 400°F (205°C). Whisk teriyaki sauce ingredients (soy sauce, maple syrup, vinegar, ginger, garlic, sesame oil, cornstarch).
  2. 2Toss tofu cubes in half the sauce. Place on lined baking sheet and bake 25-30 minutes, flipping halfway, until crispy.
  3. 3Warm remaining sauce. Divide rice into bowls, top with baked tofu, broccoli, carrots, drizzle with sauce, and garnish.
