Ingredients
- 1 large sweet potato (about 12 oz), baked or steamed
- 1 (15 oz) can chickpeas, drained
- 3 garlic cloves, ½ small onion
- ½ cup fresh parsley & cilantro
- 2 tsp cumin, 1 tsp coriander, ½ tsp paprika
- 3-4 tbsp chickpea flour or almond flour, salt & pepper
- Olive oil spray
- Bowl/Serving: Mixed greens, cucumber-tomato salad, tahini dressing, pickled veggies.
Instructions
- 1Preheat oven to 400°F (200°C). Mash baked sweet potato. Pulse chickpeas, garlic, onion, herbs in food processor.
- 2Mix with sweet potato, spices, and flour to form a soft dough. Shape into patties.
- 3Place on lined baking sheet, spray with oil, bake 25-30 min, flipping halfway until golden and firm.
- 4Serve in bowls with fresh veggies and tahini.
