Ingredients
  • 1 large sweet potato (about 12 oz), baked or steamed
  • 1 (15 oz) can chickpeas, drained
  • 3 garlic cloves, ½ small onion
  • ½ cup fresh parsley & cilantro
  • 2 tsp cumin, 1 tsp coriander, ½ tsp paprika
  • 3-4 tbsp chickpea flour or almond flour, salt & pepper
  • Olive oil spray

Instructions
  1. 1Preheat oven to 400°F (200°C). Mash baked sweet potato. Pulse chickpeas, garlic, onion, herbs in food processor.
